Rhuba-a-pa-ruh-ba-pa-rhu-barb Muffins! 
I just created this recipe all on my own

2 C flour (spelt or whole wheat)
1/4 tsp powdered stevia (or 1/4 C sugar (or more if you like sweet))
1 1/2 tsp baking powder 
1/2 tsp baking soda
1 tsp salt
1/2 c + chopped pecans 

1 free-range, local egg 
1/4 c vegetable oil 
3/4 vanilla yogurt (or plain, but add a bit more sugar then or strawberry would be good)
1/4 apple butter 
1-2 tsp + grated fresh ginger 
1 1/2 C finely chopped rhubarb 
MIX then add to Dry ingredients

TOP with cinnamon sugar

Bake at 350 for 20-30 minutes until a knife comes out clean.
